Sauvignon Blanc – DISTINCTION

Thanks to our extensive experience in the most prestigious appellations of the Upper Loire, our “Distinction” cuvée is a top-of-the-range cuvée developed with passion by our oenologists from old Sauvignon Blanc vines.
The weekly stirring of the fine lees for 6-8 months structures the mouth in a unique way. Its concentration and richness are reminiscent of certain Pouilly-Fumé cuvées! An iconic bottle from the Domaine which stands out for the generosity of its aromas and its minerality.
WINEMAKING PROCESS
The grapes are harvested in the morning when the temperatures are cool. The grape juices are extracted in a pneumatic press after having made a skin-contact maceration of 12 hours. The juices are fermented in stainless steel tanks for 7 to 15 days.
AGEING
The aging is done on fine lees for 6 to 8 months. As in Burgundy, the lees are stirred at least once a week until bottling in the spring following the harvest.
FOOD PAIRING
Excellent with grilled salmon or pan-fried prawns.

COLOR
Pale yellow color.
NOSE
Intense nose of citrus and passion fruit.
PALATE
The mouth is fresh with a well balanced volume. The final is long with tropical notes lasting on the palate.
